Die erste Eiscreme aus Cashewsaft-Konzentrat

Immediately after my appearance on the TV show "Die Höhle der Löwen" (The Lion's Den) in August 2023, I received a message that made me particularly happy. Regina, the managing director of Dolci-Eis in Berlin – one of Germany's most popular ice cream parlors – wrote me an enthusiastic message. She was fascinated by our sustainable idea of giving new value to the often overlooked cashew apple.

Their vision: To create a new, exotic ice cream flavor from our cashew juice concentrate.

Unfortunately, it wasn't possible at the time. After the broadcast on "Die Höhle der Löwen," we were completely sold out and couldn't supply any more. But Regina persisted. She stayed in touch with me and got in touch again a few weeks later with a new idea: making ice cream from our freshly produced cashew juice concentrate.

A few weeks later, the time had finally come! I received the wonderful news that the first cashew apple ice cream was ready. The feedback from the first customers? Pure enthusiasm! The ice cream impressed not only with its refreshing taste, but also with the intense, fruity aroma of the cashew apple.

Our cashew juice concentrate, with a Brix content of 70°C, brings the concentrated power of the fruit to life. Its reduced water content makes it ideal for making ice cream, baked goods, and many other foods. It not only adds sweetness but also a unique, exotic flavor—and can also be used as a natural sweetener.

For me personally, this moment is something very special. After our first product, the pure cashew juice, followed by our cashew fruit lemonade, this ice cream is another milestone. My dream from the very beginning was to find ways to use the cashew fruit meaningfully to bring sustainable and delicious products to market. Too often, the cashew apple is viewed as a mere byproduct of cashew nuts. But it's brimming with potential!

With this new product, we are not only contributing to reducing food waste, but also creating additional sources of income for the farmers and women's cooperatives in Benin's cashew plantations, with whom I work closely.

I look forward to developing many more innovative products based on the cashew apple – together with strong partners like Regina from Dolci-Eis and many others who share our vision.
